I've never liked lunges but did not have this knee issue until recently, anytime I do it I feel like there is presser on my knee and then it is sore for the rest of the day. Concerning. Maybe it is because I am getting older. *shrugs* I started adding in Bulgarian split squats too myself and i think they are really useful. Personally, if you are getting sore knees i would try to explore why. Assuming you aren't overloading the movement it might be a sign of some disfunction that you need to correct which could lead to injury at some other point if not addressed. For me i felt quite a lack of stability when starting them so started absurdly light but once you get the form down you can progress quickly

I'm not sure, just the normal way I guess, though I do not put my knee all the way to the ground when I do it. I think I am putting pressure on the back knee that is going to the ground somehow, because that is where I feel things going wrong. The front leg has been OK.
