I started adding in Bulgarian split squats too myself and i think they are really useful. Personally, if you are getting sore knees i would try to explore why. Assuming you aren't overloading the movement it might be a sign of some disfunction that you need to correct which could lead to injury at some other point if not addressed. 

For me i felt quite a lack of stability when starting them so started absurdly light but once you get the form down you can progress quickly

I'm not sure, just the normal way I guess, though I do not put my knee all the way to the ground when I do it.  I think I am putting pressure on the back knee that is going to the ground somehow, because that is where I feel things going wrong.  The front leg has been OK.

Looks like I was leaning forward just a little and that was putting pressure on the knee.  I wasn't doing it enough to notice I was even doing it, but enough to feel the pain.  The owner of the gym helped me recognize it.

Thats great that the owner happened to be watching and spotted the issue.
