Unfortunately, I have not personally trained in Melbourne, sorry.

I did find this through a quick google search:

http://mssd.com.au/

Might be worth checking out?

At the moment I am just west of Ballina NSW, and me and my partner own a place in the Blue Mountains. We regularly (well, at least once a year nowadays anyway, which is less frequent that I would like) travel to asia (thailand, vietnam, japan and india) due to work and having family over there.

Everyone can Google, but when someone like Nidan Melbourne comes here to ask this question, they are looking for recommendations from our members here. :) I appreciate it.

Nidan Melbourne - the post yamesu of http://mssd.com.au/ - they are a great school. Their lead instructor Andy is a guy I used to train with. He went over to the Philippines for a number of years and has been doing kombatan/arnis and knife training for many many years and is very experienced. I trained with him doing Shito Ryu Karate, but we used to do stick training at my dojo with him..

Give it a go. Let us know !
