Kickboxing - I've got a copy of "Kick Boxing - A Framework for Success" by Pat O'Keefe here on my desk which is an excellent introductory book.

Get a good digital camera. Illustrations can sometimes show what can't be written. Just remember that people learn different ways (visual, audio, and etc).

we reacently did one were it showed how to tie a belt, as some people found it a problem and also lists ot items what they will be doing with their names in both languages, kata lists and belt colours, and also useful contacts, history of the art and the club.
