Well here is my opinion based on what I've heard and from experience. Shoalin is way too flashy. Wing Chun is very effective, except against grapplers, and Kung Fu San Soo is one of the most brutal MA's out there. To answer the question about sparring, it depends on the teacher.

actually, southern kung fu, mainly hung fut, is similar to karate in some ways and is very practical and no-nonsense. it is devoid of the flashy kicks and acrobatics found in northern styles. San Soo is arguably the best combative martial art, and wing chun is also very effective. it is however theory based, linear, and quite boring

Well boring is a matter of opinion. Classical music is found to be boring by many people, but it is also beautiful and intricate. San Soo is not linear, Wing Chun is. :D

By boring I mean that all of the moves are devoid of the flashiness found in most other arts. I was taught some Wing Chun at a previous school, and it was hardly what I would call beautiful or intricate.

Then, with respect, you don't know what you were looking for. WC is SO intricate - that's why you can't learn it from watching other people - you must be taught by a teacher. Every movement is bursting with nuance.

 

Beautiful ? What works is beautiful, what looks nice is ornamental.
