Although we all know the benefits of drinking Green tea, (it contains a powerful anti-oxidant called polyphenol which are currently being linked to anti-cancer and anti-heart diseases) ... but so does black tea! Here are some facts about tea: All types of tea, including both green and black tea come from the same evergreen shrub(Camellia sinensis). While black tea is fermented, green tea is not. Fermentation changes the the chemical structure of the tea leaf and allows key flavor characteristics to emerge. Because green tea is not fermented, it has one-third the caffeine per cup as black tea. In general, the different degrees in processing results in green tea polyphenols being more potent in anti-cancer activities than black tea polyphenols. So what is Red tea? taebot Posted January 9, 2003 Author Posted January 9, 2003 All the tea in China is a great little book that covers all aspects of tea, history, culture, use, types, etc. I also have The Book of Tea by Okakura which is a great look into the Japanese Tea culture. I have a friend who runs a restaraunt who gives me a fantastic oolong from his home in the Fuzhou area. I never mix whiskey and cha. Now coffee and whisky... This was long before I was educated in the ways of tea, so I just kept sitting there drinking little cup after little cup of different teas until I got to the point that I needed a little space on the Palace Wall !
