I'm afraid I can't say much about Toronto, but I will advocate the Filipino martial arts. They're more concerned with combative effectiveness than tradition. Look for Escrima, Kali, or Arnis.

Being afraid of knives is not a bad thing. Training and gaining competence will help keep it from being a paralyzing fear, but to have no fear is to be deluded.

I second the Filipino martial arts for being incredibly practical when it comes to weapons training.

Learn stick fighting and you won't worry about people with knives as much.

Or if you are really worried about being attacked I suggest studying the arts of 'click-pow' or 'glock-fu'

Concealed carry is only for law enforcement in my state.

Is there a concealed carry law in Ontario, or in Canada for that matter. I am ignorant to such things.

There are very few places that teach how to fight with knives. Mostly they provide several defense techniques against knives and that's it.
