really bunkai is what ever you see, if you say "today im gonna practice bone breaks" then your katas movements can be changed up slightly to accomidate this. it is the same with anything, you can practice takedowns, kyusho, joint locks, skin ripping, bone breaks or even kill strikes you just need imagination. take what you learn from your basics and tweak it and youll be surprised with the things that youll come up with

We teach "Oyo" as the application of the kata. I tell students when doing application that 2 things must happen. It must resemble the part of the kata so I know they grasp what they are doing and 2 it must work in a practical way.
