Don't worry about practical. Biggest flashy movements you can think of. Breaking, Throws and Weapons are always a big hit. Don't worry about complex movements, they don't understand them anyway. Demoing simple stuff, straightforward stuff would be better for people who know and understand the arts. Little kids love flashy stuff, but if you work with individuals of more mature age, hard and flasy moves are more discouraging. A great martial artist is one who is humble and respectful of others. Then once the kids have seen that the adults ALWAYS lose we get volunteers up to participate, then a bit of bribery with sweets for the winning team!We do all our basics, get the dan grades to do a kata, then the kids up to show that its not scary like the audience might think. After that, the black belts will demo some sparring, and then the black belts will do some board breaking.
